Cool Off with Ceviche

This is a wonderful refreshing ceviche recipe that I found a hundred years ago put out by Texas Parks & Wildlife.  Our favorite fish to use is Redfish, but I have used Trout, Bass and even Catfish.  Fresh fish is a must.  Makes a cool summertime dinner, or great as an appetizer.

1 pound lean, white, skinless fish fillets

1/2 cup fresh lime juice

1/2 cup chopped green onion

1 cup chopped tomatoes, drain on paper towel

1 small chopped jalapeno pepper

2 tablespoons chopped fresh parsley

30 pimiento stuffed olives

20 capers

1/4 cup olive oil

1/8 teaspoon cumin

Salt & Pepper to taste (fresh ground pepper is best)

1/4 teaspoon oregano

Cut the fish into dime size pieces.  Cover with lime juice and chill in a refrigerator bowl with a sealable lid  for at least 4 hours, stirring once or until fish turns opaque.  (Some folks like to slightly cook the fish first, but I like the fish to absorb the lime juice).  Drain and  mix with remaining ingredients.   Makes 4 to 6 servings as a first course over sliced avacado.  Or serve as an appetizer with saltines.

Serve your ceviche as a 1st course in a giant Margarita glass. I serve a ‘Seafood Martini’ in glasses I handpainted.

Fishing the San Marcos – May 2011

The first of May found Heritage Game Mounts fishing a day on the San Marcos river with guide and new friend, Kevin Hutchison of Hill Country Flyfishers, Fishhead@texas.net.  It was a truly beautiful day as I fished a Llano Bug on top while Skip chose a Swamp Monster sub surface, all tied by Kevin.

We caught the pugnacious Redbreasted sunfish, many Guadalupe bass and a large mouth.  Kevin’s brand new inflatable raft was super comfy and roomy.  The 10 1/2 hour trip was over before we knew it.  A wonderful lunch was set up streamside, with everything one could need for an elegant riparian feast, including the tablecloth!  Kevin takes pride in preparing himself our lunch of grilled chicken bacon pasta salad, Hummas with grilled jalapenos, fresh fruit and brownies.

Santa Anna Quail Hunt March 2011

Santa Anna Quail Hunt

In March HGM joined friends for a two day hunt at the Santa Anna Hunting Area owned  by Gerry & Eldena Stearns (saha@web-access.net).  In addition to hunting Bob White and Tennessee Reds, we also found the occasional Chukar and Pheasant.  It was a wonderful 2 days and Eldena did a great job preparing our birds to be enjoyed for many future meals.

Troutfest 2011 Fly Fishing Expo

HGM attended the 2011 Troutfest Banquet and 2 day expo in New Braunfels, Tx .  The event was held on the banks of the Guadalupe River at Rio Raft Resort.  They had a phenomenal turnout and many fly fishing celebs showed up thanks to the hard work of dedicated volunteers under the supervision of Phil Dopson of the Guadalupe River Trout Unlimited chapter.
